Smothered Pork Chop Scalloped Potato Casserole

Ingredients
  

  • 4 bone-in pork chops about 1-inch thick
  • salt to taste
  • black pepper to taste
  • 1 tbsp vegetable oil
  • 1 large onion thinly sliced
  • 3 cloves garlic minced
  • 3 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 1 cup chicken broth
  • 2 lbs potatoes thinly sliced
  • 1 cup cheddar cheese shredded
  • 1 tsp paprika
  • fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 350°F (175°C). Season pork chops with salt and pepper.
  2. Heat oil in a skillet over medium-high heat. Brown pork chops on both sides, then set aside.
  3. In the same skillet, cook onions and garlic until softened. Stir in flour and cook for 1 minute to form a roux.
  4. Gradually whisk in milk and chicken broth. Cook until sauce thickens, then remove from heat.
  5. Layer half of the sliced potatoes in a greased casserole dish. Top with half the sauce and half the cheese.
  6. Repeat layers with remaining potatoes, sauce, and cheese. Sprinkle paprika on top.
  7. Place browned pork chops on top. Cover with foil and bake for 1 hour.
  8. Remove foil and bake an additional 15–20 minutes until potatoes are tender and pork is fully cooked.
  9. Let rest 10 minutes before serving. Garnish with chopped parsley.

Notes

Add mushrooms or bell peppers for extra flavor. For a richer dish, substitute half-and-half for milk.
