Ingredients
  

  • 3 lbs russet potatoes
  • 1 cup mayonnaise
  • 0.25 cup yellow mustard
  • 2 tsp apple cider vinegar
  • 2 tsp sugar
  • 0.5 tsp onion powder
  • 0.25 cup pickle relish sweet
  • 1 stalk celery chopped
  • 0.5 sweet onion chopped
  • 4 eggs hard boiled
  • paprika for garnish

Method
 

  1. Boil potatoes in salted water until fork-tender, about 20 minutes.
  2. Drain, cool, peel, and cut into bite-sized pieces.
  3. Mix mayonnaise, mustard, vinegar, sugar, and onion powder.
  4. Pour dressing over potatoes and mix.
  5. Add relish, celery, onion, and chopped eggs; combine.
  6. Season to taste, top with sliced egg and paprika.
  7. Refrigerate at least 4 hours before serving.

Notes

Chilling is key—it allows the flavors to fully develop. For extra richness, add a bit more mayo before serving if needed.
