- Arrange spinach in a large bowl and top with eggs, mushrooms, bacon, cheese, and almonds.
- Heat olive oil in a skillet and sauté shallots and garlic until softened.
- Whisk in vinegar, Dijon mustard, honey, and crumbled bacon.
- Cook until dressing is hot, then season with salt and pepper.
- Pour warm dressing over salad and toss immediately.

Serve immediately after adding the warm dressing so the spinach slightly wilts without becoming soggy.
