Ingredients

  • 10 slices white sandwich bread crusts removed
  • 1 1/2 cups fresh strawberries finely diced
  • 4 ounces cream cheese softened
  • 1/4 cup powdered sugar
  • 2 large eggs
  • 2 tablespoons milk
  • 3 teaspoons granulated sugar divided
  • 1/4 teaspoon ground cinnamon
  • cooking spray or butter for the skillet
  • maple syrup, powdered sugar, or extra strawberries optional, for serving

Method

  1. Place the diced strawberries in a small bowl. Add 1 teaspoon of granulated sugar and gently toss to coat. Set aside.
  2. In a separate bowl, mix the softened cream cheese and powdered sugar until smooth and creamy.
  3. Trim the crusts from the bread slices, then flatten each slice with a rolling pin until thin and flexible.
  4. Spread about 1 teaspoon of the cream cheese mixture along one edge of each bread slice.
  5. Top the cream cheese with a small spoonful of the sweetened strawberries, taking care not to overfill.
  6. Starting at the filled edge, roll each bread slice tightly into a cylinder and place seam-side down.
  7. In a shallow bowl, whisk together the eggs, milk, remaining 2 teaspoons granulated sugar, and cinnamon.
  8. Dip each roll up briefly into the egg mixture, turning to coat all sides without oversaturating the bread.
  9. Heat a large nonstick skillet over medium heat and lightly coat it with cooking spray or a small amount of butter.
  10. Place the roll ups seam-side down in the skillet. Cook until golden, then turn and continue cooking until all sides are browned and the egg coating is cooked through.
  11. Work in batches if needed to avoid overcrowding the skillet.
  12. Serve warm with powdered sugar, maple syrup, or extra fresh strawberries if desired.

Notes

For cleaner rolls, pat very juicy strawberries dry before filling. You can also add a little vanilla extract to the cream cheese mixture for extra flavor.
