- In a large skillet, cook ground beef, breaking it apart. Add onion and bell peppers and cook 5–10 minutes until beginning to soften.
- Stir in garlic and cook 1–2 minutes until fragrant.
- Add Worcestershire sauce, beef broth, diced tomatoes, rice, Italian seasoning, salt, and pepper. Bring to a boil.
- Cover, reduce heat to a simmer, and cook about 20 minutes, stirring halfway through, until rice is tender.
- Stir in half of the mozzarella and cheddar until melted and incorporated.
- Sprinkle remaining cheese over the top, cover until melted, or broil briefly if using an oven-safe skillet.
- Remove from heat and serve hot.
Notes
Use ground turkey for a lighter version or add extra peppers for more veggie-packed flavor. Great with a side salad or garlic bread.
