Ingredients

  • 1 roasted sweet potato about 300–350 g, cooled and mashed smooth
  • 1 large egg
  • 25 g cocoa powder about 1/4 cup
  • chocolate chips or chopped chocolate to taste, divided between the dough and topping

Method

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Scoop the cooled roasted sweet potato flesh into a medium bowl and mash thoroughly until smooth.
  3. Add the egg and cocoa powder to the mashed sweet potato.
  4. Stir until fully combined and the mixture becomes thick and evenly chocolatey.
  5. Fold in some of the chocolate chips or chopped chocolate, reserving a little for topping.
  6. Scoop portions of the soft mixture onto the prepared baking sheet.
  7. Use the back of a spoon to shape each portion into a cookie round, since the cookies will not spread much during baking.
  8. Sprinkle the remaining chocolate over the tops and press it in lightly.
  9. Bake for about 20 minutes, or until the edges are set and the tops feel slightly firm while the centers remain soft.
  10. Let the cookies cool on the baking sheet for about 10 minutes so they can firm up.
  11. Serve slightly warm or allow them to cool completely.

Notes

For the best texture, use a very soft, naturally sweet roasted sweet potato. A pinch of cinnamon or vanilla extract can also be added for extra flavor.
