Sweet Potato Truffles

Sweet Potato Truffles are rich, fudgy chocolate bites made with just dark chocolate and baked sweet potato. The sweet potato keeps the centers smooth and creamy, while a second layer of melted chocolate creates a firm shell. These simple truffles are naturally decadent, easy to prepare, and perfect for a healthier-style dessert or homemade gift.

Ingredients

  • 1 1/2 cups dark chocolate chopped and divided
  • 3/4 cup baked sweet potato skin removed
  • ground turmeric optional, for garnish

Method

  1. Add 3/4 cup of the chopped dark chocolate to a small saucepan.
  2. Melt over low heat, stirring constantly, until smooth. Remove from the heat immediately.
  3. Add the melted chocolate and baked sweet potato to a food processor.
  4. Blend until smooth and fully combined, scraping down the sides as needed.
  5. Transfer the mixture to a bowl, cover, and refrigerate for about 30 minutes, or until firm enough to scoop.
  6. Line a plate or tray with parchment paper or a silicone baking mat.
  7. Scoop about 1 heaping tablespoon of the chilled mixture and roll it gently into a ball.
  8. Repeat with the remaining mixture to make about 12 truffles.
  9. Melt the remaining 3/4 cup dark chocolate over low heat, stirring constantly until smooth.
  10. Dip each truffle into the melted chocolate, turning to coat completely.
  11. Lift each truffle out with a fork and let the excess chocolate drip back into the bowl.
  12. Place the coated truffles back on the prepared tray.
  13. Sprinkle lightly with ground turmeric, if desired, while the coating is still wet.
  14. Refrigerate for at least 1 hour, or until the chocolate shell is firm.
  15. Serve chilled or let sit at room temperature for a few minutes before eating.

Notes

Use a good-quality dark chocolate you enjoy eating on its own. If the filling feels too soft to roll, chill it for another 10–15 minutes.
