Method
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large mixing bowl, beat the softened butter and 1 cup granulated sugar until light and creamy, about 2 minutes.
- Beat in the egg.
- Add the molasses and mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
- Slowly add the dry ingredients to the wet ingredients and mix just until combined.
- If the dough is too sticky to roll, let it rest for 10 minutes or chill for 15–20 minutes.
- Scoop the dough into 1-inch balls.
- Roll each dough ball in the extra granulated sugar until coated.
- Place the dough balls on the prepared baking sheet, leaving about 2 inches between them.
- Bake for 8–10 minutes, or until the tops are puffed and lightly cracked.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
Do not overbake; the centers should look slightly soft when removed from the oven. Chill the dough briefly if your kitchen is warm or the dough feels sticky.
