Amish White Cashew Clusters with Cranberries

These no-bake treats are a lovely mix of silky white chocolate, buttery cashews, and chewy cranberries — the kind of simple indulgence that looks elegant but takes only minutes to make. Whether you’re filling a holiday candy tin or just need a quick sweet bite, these clusters bring the perfect blend of creamy, crunchy, and tart.

Ingredients:

  • 2 cups good-quality white chocolate chips
  • 1 cup roasted salted cashews
  • ½ cup dried cranberries (or cherry bits for a fun twist)

Instructions:

  1. Line a baking sheet with parchment paper and set aside.
  2. In a microwave-safe bowl or double boiler, melt the white chocolate until smooth, stirring every 20–30 seconds to prevent scorching.
  3. Once melted, fold in the cashews and cranberries until everything is evenly coated in the glossy chocolate.
  4. Drop small spoonfuls of the mixture onto the parchment-lined sheet, shaping into bite-size clusters.
  5. Let the clusters firm up at room temperature, or refrigerate them for 15–20 minutes if you’re in a hurry.
  6. When set, transfer to an airtight container. Store in a cool spot — or gift them in a pretty jar tied with a ribbon.
