Chicken Cordon Bleu Meatloaf

If you’re craving the cozy comfort of a classic but don’t feel like fussing with stuffing and breading individual chicken breasts, this Chicken Cordon Bleu Meatloaf is the perfect twist. Inspired by the traditional European dish known for its layers of savory meat and melted cheese, this version takes all those beloved flavors and tucks them neatly into an easy-to-bake loaf. It’s family-friendly, weeknight-friendly, and still feels a little bit fancy—just the way I like it.

Ingredients

  • 1 pound ground chicken
  • ½ cup plain breadcrumbs
  • ⅓ cup grated Parmesan cheese
  • 3 tablespoons milk
  • 1 large egg
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasoning (optional)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 thin slices deli ham
  • 4 slices Swiss or provolone cheese
  • ½ cup marinara or pasta sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, stir together the ground chicken, breadcrumbs, Parmesan, milk, egg, garlic powder, onion powder, Italian seasoning (if using), salt, and pepper. Mix until everything is just combined—don’t overwork it.
  3. Lay a piece of parchment paper on your counter. Press the chicken mixture into a rectangle about ½ inch thick.
  4. Arrange the ham slices evenly over the surface, then layer the cheese on top of the ham.
  5. Starting from one end, gently roll the meat mixture—using the parchment to help—into a loaf shape. Place the loaf seam-side down on a parchment-lined baking sheet or lightly greased baking dish.
  6. Spoon the marinara sauce over the top of the loaf, spreading it evenly.
  7. Bake for 45 to 50 minutes, or until the center reaches 165°F (74°C) and the top is lightly browned.

Let it rest for a few minutes before slicing so the cheese stays tucked inside. Enjoy!
