Italian Parmesan Chicken Skewers

There’s something so comforting about simple ingredients coming together on a warm grill. These Italian-inspired chicken skewers bring that old-fashioned backyard charm—tender chicken, a touch of garlic, and a shower of Parmesan that melts right into every little nook. They’re easy enough for a weeknight and special enough for company.

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 4 garlic cloves, finely minced
  • ¼ cup freshly grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • Salt and black pepper, to taste

Instructions

  1. In a large bowl, whisk together the olive oil, minced garlic, Parmesan, Italian seasoning, paprika, and a good pinch each of salt and pepper. You want a thick, fragrant coating.
  2. Add the chicken pieces to the bowl and toss until every cube is well coated. Cover and refrigerate for at least 30 minutes—though a couple of hours will deepen the flavor beautifully.
  3. Preheat your grill to medium-high about 10 minutes before cooking.
  4. As the grill heats, thread the marinated chicken onto soaked wooden skewers, leaving a little breathing room between each piece so they cook evenly.
  5. Set the skewers on the hot grill and cook for 6–8 minutes per side, turning once, until the chicken is golden and lightly charred. Make sure the internal temperature reaches 165°F.
  6. Let the cooked skewers rest for a few minutes before serving. Add an extra sprinkle of Parmesan or a scattering of fresh herbs if you’re feeling fancy.
