Peanut Butter Balls with Chocolate Rice Crispy

Ingredients:

1 cup creamy peanut butter

2 tablespoons unsalted butter, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

2 cups chocolate rice crispies cereal

1 1/2 cups semi-sweet chocolate chips

1 tablespoon coconut oil or shortening (optional for smoother melted chocolate)

Instructions:

-In a mixing bowl, blend the creamy peanut butter, unsalted butter, powdered sugar, and vanilla extract until you achieve a smooth consistency.

-Gently fold in the chocolate rice crispies into the peanut butter mixture. Make sure they’re evenly coated.
