Classic Tapioca Pudding

Classic Tapioca Pudding is a creamy, old-fashioned dessert made with whole milk, quick-cooking tapioca, eggs, sugar, and vanilla. The tiny tapioca pearls give the pudding its signature texture, while the custard-style base keeps it rich and smooth. Delicious served warm or chilled, this simple homemade dessert is comforting, nostalgic, and easy to prepare.

Ingredients

  • 3 cups whole milk
  • 1/2 cup quick-cooking tapioca
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 large eggs beaten
  • 1/2 teaspoon vanilla extract

Method

  1. In a medium saucepan, combine the whole milk, quick-cooking tapioca, granulated sugar, and salt.
  2. Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring constantly to prevent scorching.
  3. Once the mixture begins to boil, reduce the heat to low and continue cooking for about 5 minutes, stirring frequently, until the tapioca begins to soften and the mixture thickens slightly.
  4. Place the beaten eggs in a medium bowl. Slowly whisk about 1 cup of the hot milk mixture into the eggs, adding only a small amount at a time to temper them.
  5. Gradually pour the warmed egg mixture back into the saucepan while stirring constantly.
  6. Increase the heat slightly to medium-low and bring the pudding to a gentle simmer. Cook for about 2 minutes, stirring continuously, until the mixture is thick enough to coat the back of a spoon.
  7. Remove the saucepan from the heat and stir in the vanilla extract.
  8. Serve the pudding warm, or transfer it to individual bowls or one large serving dish and refrigerate for 2–3 hours until chilled.

Notes

For an extra-rich version, replace 1/2 cup of the milk with half-and-half. Sprinkle with cinnamon or nutmeg before serving for a warm, classic finish.
