Ingredients
  

  • 2 lbs sweet potatoes thinly sliced
  • 4 tbsp unsalted butter melted
  • 2 cloves garlic finely grated
  • 1 tbsp fresh thyme plus extra for garnish
  • 2 tbsp honey
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat oven to 400°F and grease a 12-cup muffin pan.
  2. Melt butter and whisk with garlic and honey.
  3. Slice sweet potatoes very thin and place in a bowl.
  4. Toss slices with butter mixture, thyme, salt, and pepper.
  5. Stack slices into muffin cups, filling to the top.
  6. Bake 30–40 minutes until tender and caramelized.
  7. Rest briefly, then remove and garnish with fresh thyme.

Notes

Slice potatoes evenly for consistent cooking. A mandoline ensures thin, uniform slices for best texture.
