- In a large bowl, whisk together the flour and salt for the crust.
- Cut in the cold cubed butter with a pastry cutter or fork until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the egg yolk and cold milk.
- Add the milk mixture to the flour mixture and stir until the dough comes together, adding another tablespoon of milk if needed.
- Divide the dough into two pieces, one slightly larger than the other. Wrap and chill for about 30 minutes.
- In a large bowl, toss the sliced apples with granulated sugar, flour, cinnamon, nutmeg, and lemon juice.
- Preheat the oven to 375°F.
- Roll the larger piece of dough into a rectangle large enough to fit a 10x15-inch jelly roll pan.
- Gently press the dough into the pan and up the sides, patching any tears as needed.
- Spread the apple filling evenly over the bottom crust.
- Dot the apple filling with small pieces of butter.
- Roll out the second piece of dough and place it over the apples.
- Seal the edges, then cut a few small slits in the top crust to vent steam.
- Bake for 35–45 minutes, until the crust is golden and the filling is bubbling through the slits.
- If the edges brown too quickly, cover them loosely with foil.
- Let the pie cool for at least 20–30 minutes before glazing.
- Whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Drizzle the glaze over the cooled pie and let it set for a few minutes.
- Slice into squares and serve.
Notes
Use a mix of tart and sweet apples for the best flavor. Let the pie cool before glazing so the icing stays visible and sets nicely.
