Zucchini Patties

Ingredients:

2 large zucchini (about 300g)
1 onion or leek
1 garlic clove (optional)
Aromatic herbs: flat-leaf parsley, mint, basil or coriander
1 egg
1 teaspoon flour
2 tablespoons of heavy cream (classic or vegan)
salt pepper
Paprika, curry, split pepper, etc…
butter / oil for frying

Instructions:

-Wash, dry and grate the zucchini. Place it in a clean towel and squeeze it well to remove the juice.

-Finely chop the onion or shallot and parsley

-Mix with grated zucchini, then add the cream and all the eggs, mix, then flour, salt, pepper and spices and mix.

-Heat 20 grams of butter and a little sunflower oil in a frying pan and arrange small mounds of the preparation, flatten them into patties and cook for 3 minutes on each side, until golden brown.

-Place the pancakes on absorbent paper and serve very hot.
