Ingredients:
4 medium green peppers, halved
1.5 lb. ground beef, browned
1 package of taco seasoning mix, or look for a homemade taco seasoning recipe
3/4 cup of water
1-1/2 cups cheddar cheese
1 cup sour cream
1/2 cup salsa
Instructions:
-Preheat the oven to 350° F. Wash the peppers, then cut them in half lengthwise through the middle and remove the seeds. Place them in a casserole with 1/4 cup of water.
-Cover and microwave for 7 to 10 minutes, or until peppers are tender. Check cooking periodically.
-In the meantime, brown the ground beef until it is cooked through.
-Add taco seasoning and water and cook according to recipe or package instructions. Once the meat is cooked, add the sour cream, salsa and a cup of cheddar cheese.
-Spray a 13 x 9 baking dish with non-stick spray. Place the cooked peppers inside the baking dish and stuff generously with the meat and cheese mixture.
-Cover with the rest of the cheese. Bake in the oven at 350° F for 20-30 minutes until the peppers are hot and the cheese is melted. Serve with your favorite taco ingredients and a little salsa. Enjoy!
