Ingredients:
4 ripe tomatoes, diced
1 small red onion, finely chopped
2 cloves garlic, minced
1-2 jalapeño peppers, seeded and finely chopped (adjust to taste)
1/4 cup fresh cilantro, chopped
Juice of 1 lime
1 tsp ground cumin
1/2 tsp salt (or to taste)
1/2 tsp black pepper
1 tsp sugar (optional, to balance acidity)
1/2 cup canned corn (optional)
1/2 cup black beans, rinsed and drained (optional)
Instructions:
Prepare Vegetables:
Dice the tomatoes and finely chop the red onion, jalapeño peppers, and cilantro.
Mince the garlic cloves.
Combine Ingredients:
In a large mixing bowl, combine the diced tomatoes, chopped red onion, minced garlic, and chopped jalapeños.
Add the fresh cilantro, lime juice, ground cumin, salt, and black pepper. If using, add the canned corn and black beans.
Mix Well:
Stir all the ingredients together until well combined. Taste and adjust seasoning as needed, adding more salt, pepper, or lime juice to your preference.
If the salsa is too acidic, add a teaspoon of sugar to balance the flavors.
Chill and Serve:
For best results, cover and refrigerate the salsa for at least 30 minutes to allow the flavors to meld.
Serve chilled with tortilla chips, tacos, burritos, or any of your favorite dishes.
