Loaded Baked Potato & Chicken Casserole

Almost all children who leave home yearn for their mother’s cooking, and if they are lucky and their mother really likes to cook, this yearning is even stronger.
Although she has always tried to surprise us with new flavors and combinations, I will always want those simple dishes … the kind of food that we often eat and that she prepares with crazy ease, because just like that, today is the day of the easy casserole dish, the dish that is so simple that it doesn’t need a recipe.
The list of her dishes is huge, but one recipe will always smell of mom and the love she has given us by cooking for years is the Potato Casserole with Chicken loaded in the oven.
I often make this dish myself, but I never expect my house to taste the way I remember it. When I want to eat this dish, she goes on stage and, for the umpteenth time, brings me back to the round table in the living room.
It’s nice to make Sunday dinner special and spend that time with the people closest to me…. Some meals are like that, slow and scented with linden tree that is brought by the wind, smiling and joyful….

Ingredients :

1 kg of chicken breast
8 potatoes
1/3 cup olive oil
1 1/2 teaspoon of salt
1 TBS fresh ground pepper
1 TBS Paprika
2 TBS Garlic powder
6 TBS Hot Sauce
{Toppings}
2 cups grated cheese
1 cup crumbled bacon
1 cup diced green onion

Instructions :

Preheat the oven to 500F
In a large bowl, mix the olive oil, salt, pepper, paprika, garlic powder and hot sauce.
Cut the potatoes into cubes and add them to the bowl.
Spray a 9×13 dish with cooking spray.
Add the potatoes, leave the excess sauce in the bowl.
Cook the potatoes for 45 minutes, stirring every 15 minutes.
Cut the chicken into cubes and add it to the bowl with the remaining sauce.
Mix cheese, bacon and green onion in a small separate bowl.
Once the potatoes are cooked, add the uncooked marinated chicken.
Then spread the toppings on the chicken.
Bake for 15 minutes or until chicken is cooked.
