Ingredients:
1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
4 cups potatoes, diced
4 cups beef broth
2 cups shredded cheddar cheese
1 cup milk or heavy cream
Salt and pepper, to taste
Instructions:
-In a large pot, brown the ground beef over medium heat. Drain excess fat, then add the diced onion and garlic. Cook until the onion is softened.
-Stir in the diced potatoes and beef broth. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
-Stir in the milk (or cream) and shredded cheese. Cook until the cheese is fully melted and the soup is creamy.
-Season with salt and pepper to taste. Serve hot and enjoy!
