Kielbasa Potato Soup

Ingredients:

1 lb kielbasa, sliced into ½ inch rounds
5 medium-sized potatoes, peeled and diced
1 large onion, chopped
3 cloves of garlic, minced
4 cups chicken or vegetable broth
2 cups chopped kale or spinach
1 cup heavy cream (optional for creaminess)
2 tbsp olive oil
Salt and pepper to taste
1 tsp smoked paprika
Fresh parsley, chopped for garnish
Red pepper flakes (optional for a kick)

Instructions:

-In a large pot, heat the olive oil over medium heat. Add the kielbasa slices and cook until browned. This is your first layer of flavor, so ensure you get that lovely caramelization.

-Remove the kielbasa and set aside. In the same pot, add the onions. Once translucent, toss in the garlic. The fragrant aroma of sautéing garlic is what dreams are made of!

-Toss in your diced potatoes, ensuring they’re coated well with the onion and garlic mix. This helps in infusing them with flavor from the get-go.

-Pour in your chicken or vegetable broth. Let the mixture come to a boil before reducing the heat to a simmer.

-Add salt, pepper, and smoked paprika. Allow the soup to simmer until the potatoes are tender—this usually takes about 20 minutes.

-Once the potatoes are fork-tender, add the kale or spinach. If you’re opting for a creamier texture, now’s the time to stir in that luscious heavy cream.

-Add the browned kielbasa back into the pot. Give everything a good stir and let it simmer for another 5-10 minutes.Ezoic
