MASHED POTATOES

Ingredients:

1 pound of red potato peelings, available or off based on preference
1 cup 2% milk
2 tablespoons of low-fat cream cheese
1 c grated Parmesan cheese
3 cloves garlic
2 tsp green onion, cut into cubes
Salt & pepper to taste

Methods:

-Cut the potatoes into large pieces and put them in a pot of boiling water. Simmer for about 15 minutes or until potatoes split with a fork.

-When potatoes are cooked, heat milk/cream cheese, and garlic in a saucepan over medium heat until cream cheese melts and sauce begins to boil. As soon as it starts to boil, removing it from heat.

-When the potatoes are cooked, drain them well and mash them, leaving larger pieces of the potato if desired.
