Ingredients:
1 box (15.25 oz) vanilla cake mix
2 tsp pumpkin pie spice
1 can (15 oz) pumpkin puree
¾ cup chopped pecans (optional)
Vanilla frosting (optional)
Instructions:
-Preheat oven to 350°F and line a baking sheet with parchment paper.
-In a large bowl, mix the cake mix, pumpkin pie spice, and pumpkin puree until well combined. Fold in the pecans, if using.
-Scoop the dough onto the baking sheet, using about 2 tablespoons per cookie, and space them apart.
-Bake for 11-13 minutes or until a toothpick comes out clean. Let cool completely.
-For extra sweetness, top with vanilla frosting once cooled.
