LOADED SLOW-COOKER POTATOES

This is excellent! Melt in your mouth loaded slow cooker potatoes – gooey and bursting with amazing flavours. My new-found side dish that easily became my family’s favourite. With bacon, melted cheese, garlic, and Italian seasonings, this takes no-fuss to make!

This makes the best comfort food. It’s gooey, topped with crunchy bacon, and loaded with fluffy taters. Creamy with a hint of herbs, and cheesy. Surely you can never say no to this.

My kids love and enjoy this. It’s almost every day that they ask for this loaded potatoes. Good thing, it’s cooked in a slow cooker so I don’t need to spend forever in the kitchen. This is ultimately perfect for busy days and busy moms like me.

INGREDIENTS

Cooking spray

2 pounds baby potatoes, halved and quartered if large

3 cups shredded Cheddar

2 cloves garlic, thinly sliced

8 slices bacon, cooked

1/4 cup sliced green onions, plus more for garnish

1 tablespoon paprika

kosher salt

Freshly ground black pepper

Sour cream, drizzling

How to make it:

Step 1: Use foil to line a slow cooker and cooking spray to grease.

Step 2: Place half of the potatoes into the slow cooker followed by 1 1/4 cups of cheese, half of the garlic, 1/3 cooked bacon, half green onions, and half paprika. Then, season with salt and pepper. Do this for the remaining ingredients.

Step 3: Cook the potatoes, covered, on high for 5 to 6 hours until tender. Adjust the cooking time if using larger potatoes.

Step 4: Sprinkle on top the est of the cheese and bacon about 20 to 30 minutes before serving.

Step 5: When ready to serve, garnish with extra green onions and drizzle with sour cream. Enjoy!
